Simple Ways I Save “The All-Mighty Dollar”

I wanted to take a moment to share some simple ways in which I save a few bucks.   I was in the shower last night and got super motivated to share some of my “Money Savers” with all of you.

“Five Of My Biggest “Money Savers”

1. Don’t Buy Shower Gel instead Buy Bar Soap (Dial to be particular)

2. Don’t EVER Pay More Than $1-2 For Toothbrushes.  You Have To Replace Every 3Mos!

3. Don’t Buy Individual Red Sauce instead Buy Multi-Pak

4. Buy Pasta Noodles On Sale In Bulk.  My Favorite are angel hair noodles, they take 5 min to cook!

5. Don’t Buy Shredded Cheese instead Buy Cheese Blocks. Grate them yourself its a labor of love!

Year Savings: $616 a year! WOWZERS

I save quite a bit of money by following the rules above.  I am finally in the “adult” stage in life where I actually watch my spending a lot more closely lol! It is about time!

Mexican American Style Taco Tuesday In My Home! Gluten-Free too!

Here is one of my favorite meals for my family.  We all love chicken and tacos so this recipe really pleases everyone in my family.  ***This can be ENTIRELY GLUTEN-FREE and for my son it is, for my other family members some times they prefer a different tortilla which is ok as they have NO Gluten sensitivity.***

Chicken Tacos w/Fries & Guacamole

So there is really nothing mexican about our tacos lol…. I mean sure we use different elements but I am sure we use very different ingredients especially since a lot of our food is gluten-free.  I gave some product suggestions but DID NOT give very many brand name specifics because not everyone needs to cook Gluten-Free so as long as you use some form of what I said you are good to go!!!

Ingredients for Chicken:

  • 1lb Breast Tenders (Organic)
  • 1/4-1/2 cup Green Onions (Organic)
  • Seasoning Salt (Any)/(desired amount)
  • 1 tsp Celery Salt
  • 8 pack Tortillas

Cold Items (Veggies):

  • 1 Diced Tomatoes (Organic)
  • 1/2 Diced White Onions (we use 1 white onion but again we eat a ton of onions lol)
  • 1-2 cup Shredded/Grated Cheese
  • 1-2 cup Lettuce (Romaine or Any)(Organic)

Cook Time: 20-25 minutes

Heat your frying pan to 3/4 or light to medium heat.  Place 1-2 tablespoons of butter (whatever kind you use doesn’t matter) in your frying pan.  Allow butter to melt down.  Season chicken and place chicken in the frying pan.  You do not have to babysit this chicken recipe as the chicken will cook fairly slowly.  It is important to cook this recipe on low to medium heat because the chicken will cook quickly on the outside and still be raw on the inside if you cook it on high.  Cooking on high and then trying to leave it on to catch up the inside with the outside will just burn the exterior of the chicken so please play it safe and cook it on low heat.  Trust me.  So once the chicken starts to turn “white” (looks to be cooking and is no longer pink all the way around) you an add in the thinly sliced green onions.  I usually add about 1/4-1/2 of a cup but that is because we are onion fanatics, I know what you are thinking and yes we do have bad breath just kidding lol.. we don’t eat onions every day so lucky for all of you;-) After 15 minutes in the pan the chicken should be fairly cooked and the onions should have been added at this point and you can now “shred” the chicken.  “Shred” meaning cut it into smaller pieces so your taco is easy to bite into. Cooking time is approximately 20-25 minutes.  Remember the chicken is on a lower temp so it does take longer but your chicken won’t be crispy or burned which is excellent. While the chicken is cooking I prep all of my veggies and creams etc.

Guacamole Ingredients: (I make only enough for the meal that day)

  • 1 Avocado (Organic)
  • 2 tbs Green Onions (Very Diced)(Organic)
  • 1/2 Tomatoes (Organic)
  • 1 tsp Salt
  • Dash of Pepper
  • Splash of Lemon Juice
  • 1 bag of tortilla chips or bread to dip

Prep Time: 5-10 minutes.  I usually do this first and chill it in the refrigerator while I cook everything else.

Take out inside of avocado and mash it up in a bowl.  Add diced tomatoes, add green onions, add splash of lemon juice, add 1 tsp of salt and dash of pepper (optional).  Thoroughly mix all ingredients but don’t puree it.  You want it to still have some “chunk” to it.

Fries:

  • Bag of Ore fries
  • Gluten Free Fries
  • Honestly Any Fries

Cook TIme: 10 minutes

You can make your fries homemade I honestly didn’t.  So there was no reason to take a picture of them. lol.  I put mine in a pot, cooked them on high heat for 10 minutes to the “crispiness” I desire 🙂

So everyone in the world likely knows how to make a taco but the way I flavor my chicken is pretty “fantastic” lol without tooting my own horn.. just saying.. and I cannot give away the name brands or ingredients to my special seasoning lol…. Anyway this was my Taco Tuesday!
